I will give you the recipe then tell you how I cook it

I don't always follow instructions very well
Cowboy Rice
1lb ground beef
1 large onion, chopped
1 large green bell pepper, chopped
1 can tomatoes
1/2 cup uncooked rice
2 tsp. chili powder
2 tsp. salt
1/8 tsp. pepper
Preheat oven to 350*. In skillet, brown ground beef, drain off fat. Add onions and peppers. Cook and stir until veggies are tender. Stir in tomatoes, rice, and seasonings. Heat through. Pour into ungreased 2 qt casserole dish. Cover and bake for 1 hour.
Ok here is what I do.
I don't use all the onions and peppers. Lots of the time I leave them out totally (dh doesn't care for them) Ground beef amounts vary by what I have on hand. I always add more rice (to stretch it).
I brown the ground beef (or take a bag I have precooked out of freezer and pop in microwave).
When meat is done I add the onions and peppers (or start these in a skillet while warming meat and gathering other stuff)
Then I mix everything together and dump in a casserole dish and bake.
I use the big can of tomatoes and always at least 1 cup of rice, sometimes 2cups. I just add extra tomatoes and a tad of water. Oh and double or triple the chili powder and pepper. I don't so much the salt since that can be added at the table to suit each persons taste.
My guys like to add ketchup on it when eating. It is really good cooked like it should be, I just played with it to stretch it.
