Thread: need a low carb, low fat snack idea...

    Default need a low carb, low fat snack idea...

    that also tastes good!!! (is there such a thing? )

    I am bringing snack for our Bible study group this week,and several of them are on the 17day diet, which limits carbs quite a bit,and also is a lower fat plan. They are on various stages of the diet, so I think I would be ok bringing some kind of dip with veggies. Or a cheese spread or something?

    any other ideas?

    Amy, try googling South Beach Diet recipes. That's a low carb low fat diet.

    However, you could try a low fat baked cheesecake. The big kicker is going to be sweetener. I make one and use pure stevia extract because it has no calories and no carbs to it. You could also look at using Splenda which is no cal no carb sweetener.

    Or, for a REALLY simple one I'd go with Black Bean Brownies. My family actually begs for these things.

    1 can black beans
    2 t baking powder
    1 t vanilla
    3 eggs
    1 c sugar {you could use splenda; I've used many different things but your best bet for keeping it super low carb is splenda in regards to easy to get ahold of}
    1/3 c butter {I've never omitted this but I have gotten by with only a few tablespoons}

    Throw it all in a bowl and use a stick blender to blend until COMPLETELY smooth. Pour it into a greased 8x8 pan and bake at 350 for 15-20 minutes or until a toothpick comes out clean.

    I think Tammy's Recipes has this recipe too incase I've quoted the ingredients wrong. She adds choco chips to hers but we never have. These are great HOT or COLD, but not so terrific in the in between stage. They are super moist too which is really nice. I made a double batch of them up on Saturday and my kids polished the last off this morning.

    Sorry, not sure of the nutritional information, but you could put it into Fitfriends.com or Sparkpeople and get a nutritional feed out. I'm PRESUMING {not always wise I know} that it's fairly low carb because it's permitted on Phase 1 of south beach when you are permitted NO carbs including fruit and carby veggies.

    Veggies are 5 grams of carbs per 1/2 cup serving. Dips made with low-fat yogurt or sour cream or cream cheese are 2 grams of carbs per 2 tablespoons.

    Hummus and veggies for dip

    Dip made with Chobani greek yogurt, I always make this and have it with tortilla chips made from beans (these are available in the natural foods section of my grocery store)

    Other than that, hmmmm, maybe turkey slices rolled up with mustard or horseradish for dipping/spreading whatever

    Sorry Kendra- great ideas but anything with sugar, or alternative sweeteners is out. I just remembered one of the ladies gets a terrible reaction to stevia,and another gets reactions to things like splenda,etc.

    I have lots of veggies left over from a party yesterday,and a full container of dip. Maybe I'll bring that and some leftover cranberry bars (for the non-dieting ppl)
