    Default Wanted: Marinade Recipes

    I'd love some marinade recipes, preferably ones that don't require soy sauce.

    I'm a "marinate it in Italian dressing" kind of gal, so not much help to you... but I have to tell you, in my sleep fogged state, this morning, I read the post as MARMALADE recipes...

    I'm not much more awake thanks to partying neighbors all night, but I promise I didn't need marmalade recipes!

    I've seen the itallian dressing one around, my grandma use to make it... Hmm..

    Hey Kendra, I saw your request the other day and was thinking..."Man, I don't think I have any good marinade recipes." Then, this morning I went to get dinner stuff toghether...and hey, I am using a marinade!

    We most often use this recipe with cooked chicken, it is a good way to use re-invent left overs. It is also good with raw meat. I have even substituted apple cider vinegar when I was out of lemon- still good. The lemon juice is better, but still yummy.

    Fajita Seasoning Mix
    Source: Real Food Fast e-book
    3 T. seasoned salt
    3 T. oregano
    3 T. ground cumin
    2 T. garlic powder
    1 T. chili powder
    1 T. paprika
    2 t. crushed red pepper flakes
    1 T. sucanat, optional
    ¼ c. arrowroot powder

    Mix and store in airtight container.
    To use, combine 3 T. mix with 3 T. olive oil and 3 T. lemon juice. Use as marinade with uncooked chicken, or use with 2c. leftover shredded chicken. Sauté with one sliced onion, one green pepper, and one sliced tomato for fajita filling. Wrap in tortillas or serve over rice with sourcream, shredded cheese, and salsa on the side.

    Not a recipe, but I often use Mojo Criollo sauce made by Goya as a marinade. Yummy for pork and chicken and seafood as well. If you cannot obtain it in Oz, I know you can Google "homemade mojo criollo sauce or something like that and find recipes for doing it yourself; I just never found one quite as good as Goyas.
